After over a decade working in leadership roles in some of the best bars in NYC, including Maison Premiere, Death & Co., and The Dead Rabbit, Jillian has recently relocated to Charleston, South Carolina to open her own bar Hazel & Apple. Partnering with Sean Muldoon (Merchant Hotel, Belfast & The Dead Rabbit, NYC), the bar is expected to open in Fall 2024. Jillian is best known for her creative drink and menu development skills, as well as bar logistics, events, and education. During her tenure as the bar manager of The Dead Rabbit, the venue was awarded World’s Best Bar twice. Over the years, resulting from the success of The Dead Rabbit, she was able to travel the world as an ambassador for the bar, delivering seminars, guest shifts, and residencies. Before landing in New York City, Jillian was introduced to the world of hospitality in Phoenix, Arizona, where she worked at Four Peaks Brewing Co. and Jade Bar & Elements at The Sanctuary Resort.
